A smokehouse cures meat with cool smoke over many hours, and the smoke does two jobs at once: it flavours the meat and slows the bacteria that would spoil it.
The building is kept small and tight so the smoke lingers, with the fire set apart from the meat and fuelled by hardwood that burns slowly.
